Curry Beef Stew – It’s what’s for dinner!

Beef cubes, baby carrots, mushrooms, fingerling potatoes, onion slivers and S&K Hot Curry mix. Yum, yum, yum.

Well, it’s time to turn to comfort food…with a twist. This classic beef stew has a bit of a kick with S&K brand Hot Curry mixed in. I start by sauteing the carrots (whole baby carrots) with the mushrooms and onions in just a touch of olive oil. I layer the fingerling potatoes and the beef cubes in the crock pot.  Once the onions are translucent, I add 2 1/2 cups of water to the pan and bring to a boil and add the curry mix – it’s like a paste brick in the package. I bring the mixture to a boil again stirring constantly to mix the paste into the water. When it’s all mixed, I pour the liquid over the potatoes and beef in the crock pot and set it on Low Heat overnight.  This morning, the house smelled delicious! I turned it up on High Heat for about 2 hours, then back to Low Heat until dinner time. It’ll be served with cottage cheese and biscuits. See?! Comfort food with a twist!!
