Weathering Hurricane Sandy … *NEW* Spicy Red Sauce with Spinach!

What better way to spend a day trapped inside than experimenting with a new recipe?! I got out to the store this morning before things started “heating up” around here and picked up some fresh, organic tomatoes and spinach for this recipe. It’s my classic spicy red sauce with the added tastiness of spinach…how could any of that be bad?? It can’t! My husband, Steve, can’t wait to try it. The sauce has been cooking all day and the house smells like garlic, onion, and all those great Italian spices. YUM!!

Next step is adding the spinach…can’t let it cook too long with the spinach, or it will break down and become mushy.
